Toast is convenient. Plain toast every morning is also a fast route to breakfast boredom.
Podi fixes that with one spoon and very little ceremony. The roasted pulses, chillies and spices turn buttered bread into something savoury, warm and properly satisfying.
The basic podi toast
- 2 slices of bread
- 1 to 2 teaspoons butter or ghee
- 1 to 2 teaspoons podi
Toast the bread until crisp at the edges. Spread the butter while the surface is still hot, then sprinkle the podi evenly.
Press it gently with the back of a spoon so the powder sticks instead of landing on your shirt.
Start with less podi
Podi blends vary in salt and chilli. Begin with half a teaspoon per slice, taste and add more if needed.

Extra butter can soften heat, but it can’t undo too much salt.
Pan toast gives better contact
Spread a thin layer of butter on the bread and place it butter-side down in a warm pan. Toast until golden.
Turn it over, lower the heat and add a little more butter with the podi. Cover for about half a minute if you’re adding cheese.
Keep the flame low after adding podi. Fine spices can burn quickly on a dry pan.

Add egg when you need more protein
Top the toast with sliced boiled egg, scrambled egg or a fried egg. Add the podi after the egg is cooked so its aroma stays fresh.
Taste before adding salt because the podi may already provide enough.
Paneer and curd work too
Crumbled paneer makes a mild topping that carries the podi well. Warm it briefly with chopped onion or capsicum if you have another few minutes.
Thick curd creates a cooler version. Spread it only when you’re ready to eat so the toast stays crisp.
You can also serve plain curd on the side, much like the podi-curd dip.
What about cheese?
Cheese works, especially on a pan-toasted slice. Use a modest amount so it doesn’t bury the roasted flavour of the podi.
A mild cheese usually makes more sense than a strongly flavoured one. Podi should still taste like podi.
Make it lunchbox-friendly
Let the toast cool before packing or trapped steam will soften it. Keep wet toppings separate.
For a sandwich, place paneer, egg or cheese between two podi-buttered slices and toast both sides. It travels better than an open slice.

Toast the bread, add butter or ghee and sprinkle podi while the surface is warm.
That’s the whole base recipe. Egg, paneer, curd and cheese are useful additions, but the five-minute version is already good enough to repeat.
