Podi stuffed mushrooms are the sort of snack you can put on the table while everyone is still chatting. The caps hold a savoury paneer filling, and Karnataka Podi brings roasted flavour without a long list of extra spices.
The small detail that matters is moisture. Cook the chopped stems before mixing them with paneer. A dry filling stays tucked inside the mushrooms instead of leaving a puddle on the tray.

Ingredients
- 12 large button mushrooms, about 250 to 300 g
- 100 g paneer, finely crumbled
- 1 tablespoon Rapidli Karnataka Podi, divided
- 2 teaspoons oil, divided
- 1 small onion, finely chopped, about ¼ cup
- 1 tablespoon chopped coriander
- ½ teaspoon lemon juice, optional
- Salt only if needed
How to make podi stuffed mushrooms
- Prepare the caps. Heat the oven to 190°C. Wipe the mushrooms clean, or rinse briefly and dry thoroughly. Gently remove the stems. Keep the caps whole and finely chop the stems.
- Cook the filling base. Heat 1 teaspoon oil in a pan over medium heat. Add onion and cook for 3 minutes. Add the chopped stems and cook for 4 to 5 minutes, stirring, until their released water has evaporated.
- Mix the paneer filling. Take the pan off the heat. Stir in paneer, 2 teaspoons podi and coriander. Taste, then add a little salt only if it needs it. Add the optional lemon juice.
- Fill the mushrooms. Brush the outside of the caps with the remaining teaspoon of oil. Set them open-side up on a lined baking tray. Divide the filling between them and press it in gently. Keep the mounds small enough to sit securely.
- Bake. Bake for about 15 to 20 minutes. Start checking at 15 minutes. The caps should be tender, the filling hot and the tops lightly coloured. Mushroom size and oven strength affect the time.
- Finish and serve. Sprinkle the remaining teaspoon of podi over the warm mushrooms. Let them stand for 2 minutes, then lift onto a serving plate. Leave any liquid on the baking tray.
Air-fryer option
Arrange the filled caps in one layer with a little space between them. Air fry at 180°C for roughly 8 to 12 minutes, checking from 8 minutes. Work in batches if needed.
Look for tender caps and hot filling rather than relying on the clock alone. Add the finishing podi after cooking, just as you would with the oven method.
Why cook the stems first?
Mushrooms release water as they cook. Putting raw chopped stems into the filling gives that water somewhere to collect. A short pan cook removes much of it before the mushrooms reach the oven.
Paneer should also feel fairly dry. If yours sits in water, drain it and pat it dry before crumbling. Skip curd in this filling. You want it to hold together without becoming wet.
