Podi is a South Indian dry chutney powder, often called gunpowder masala. Sprinkle it on familiar food, mix with ghee or sesame oil, or use it in a marinade.

Karnataka: richer, with coconut and garlic, for rice, dosa and marinades. Tamil: the everyday all-rounder for idli, dosa and savoury meals. Andhra: a spicy choice for eggs, fish rubs and roasted foods. Kerala: mild and peppery, especially good with poha, idli and rice.
