Podi sprouts chaat gives a simple bowl of cooked moong sprouts a roasted, savoury finish. Cucumber brings crunch, tomato adds juiciness, and a little lemon keeps the bowl bright.
The sprouts are thoroughly cooked in this recipe. The fresh vegetables provide the crunch, so there’s no need to leave the sprouts raw.

- 1½ cups thoroughly cooked, well-drained moong sprouts, about 225 g
- ½ cup diced cucumber
- ¼ cup diced tomato
- 1 tablespoon chopped coriander
- 1 teaspoon Rapidli Tamil Podi, plus more to taste
- 1 teaspoon oil, optional
- 1 teaspoon lemon juice, plus more to taste
- Salt only if needed after tasting
Start with properly cooked sprouts

If you’re starting with raw moong sprouts, rinse them and cook in simmering water until they’re steaming hot throughout and the beans are tender. Time varies with their size and age. Follow pack instructions where provided.
Drain well. For immediate serving, let the steam escape briefly before mixing. If preparing ahead, chill promptly in a shallow container and keep refrigerated.

How to make podi sprouts chaat
- Prepare the vegetables. Wash the cucumber, tomato and coriander under running water. Dry, then chop. Use a clean board and bowl.
- Combine the base. Put the cooked, drained sprouts in a bowl. Add cucumber, tomato and coriander.
- Season at the last moment. Add 1 teaspoon podi, the optional oil and 1 teaspoon lemon juice. Toss gently until the seasoning spreads through the bowl.
- Taste before adding salt. Try a spoonful with sprouts and vegetables together. Add another small pinch of podi or a few drops of lemon if needed.
- Serve straight away. Divide between bowls. Don’t leave the dressed chaat sitting on the counter while you prepare the rest of lunch.
Why add podi just before eating?
Cucumber and tomato release water after seasoning. A long wait thins the flavour and can leave some powder at the bottom.
Draining the sprouts well helps too. The bowl should be moist enough to enjoy, without a puddle around the beans.

Can you prepare it ahead?
Keep the cooked sprouts and chopped vegetables refrigerated in separate containers. Carry the podi separately and mix only when you’re ready to eat.
