How to make podi masala peanuts

- Check the peanuts. Use crisp roasted peanuts that smell fresh. This short recipe isn’t a roasting method for raw peanuts.
- Warm the oil. Heat the oil in a small pan over medium-low heat. Add the completely dry curry leaves carefully, if using. Stir briefly until crisp, without letting them blacken.
- Warm the peanuts. Add the peanuts and lower the heat. Stir for about 3 to 4 minutes, until warmed through. Watch them closely because they’re already roasted.
- Take the pan off the heat. Put it on a heatproof surface. Add 1½ teaspoons podi and toss until it coats the nuts.
- Taste a cooled peanut. Add the remaining ½ teaspoon podi if you want more flavour. Add salt only if needed.
- Let them cool slightly. Spread on a plate for a few minutes, then serve. The seasoning should feel dry and lightly attached, rather than wet or sticky.
Why season off the heat?
The peanuts have already been roasted, and so have the ingredients in the podi. They only need enough warmth to bring the bowl together.
Keeping the podi on a hot pan for several minutes can scorch the finer particles. More heat won’t help the coating stick.
If the flavour seems bitter, don’t cover it with more seasoning. Check whether the nuts or spices have burnt.
What if the powder falls off?
Start with the measured oil and toss well. A light coating helps the podi catch on the nuts without leaving an oily puddle.
A little powder at the bottom is normal. If most of it falls away, toss again before adding another ¼ teaspoon oil. Don’t add water to fix it; that works against a crisp snack.
Serve now or save a small batch
For the best crunch, make what you’ll eat that day. If saving some, cool completely before putting it in a clean, dry, airtight container.
Keep it away from heat and moisture. Use a dry spoon and check that the peanuts still smell fresh before eating.
