Plain popcorn is a blank page. Butter and salt work, but podi makes the bowl much harder to ignore.
This quick podi popcorn takes about 10 minutes. It’s spicy, savoury and built for movie nights when opening another packet of chips feels boring.
What you’ll need
- 1/3 cup popcorn kernels, or one bag of plain microwave popcorn
- 1 to 2 tablespoons ghee or neutral oil
- 2 teaspoons podi, plus more to taste
- A small pinch of salt, only if needed
- A few curry leaves, optional
This makes one large sharing bowl or two sensible snack bowls.
Stovetop method
- Heat 1 tablespoon of oil or ghee in a heavy pan over medium heat.
- Add two popcorn kernels and cover the pan.
- When they pop, add the remaining kernels and cover again.
- Shake the pan every few seconds so the kernels don’t burn.
- Turn off the heat when the popping slows to a few seconds between pops.
- Move the popcorn to a large bowl while it’s still hot.
Microwave method
Use plain or lightly salted microwave popcorn. Avoid cheese, caramel or heavily buttered versions because they fight with the podi.
Cook it according to the packet instructions, then empty it into a roomy bowl.
How to make the podi stick
Warm 1 tablespoon of ghee or oil. Drizzle it over the popcorn in a thin stream while tossing.
Add half the podi and toss again. Taste before adding the rest.
If you dump all the fat in one spot, a few pieces turn soggy while the rest stay bare. A slow drizzle works better.

Add curry leaves if you have them
Heat a teaspoon of oil in a small pan. Add dry curry leaves and fry them until crisp.
Let them cool for a moment, crush them lightly and mix them through the popcorn.
Make sure the leaves are dry before they hit hot oil. Wet leaves can spit.
Why did my seasoning fall to the bottom?
The popcorn was probably too dry when you added the podi.
Use a little melted ghee or oil first. Toss in a large bowl, not the cooking pan, so the seasoning can spread.
A fine podi clings more easily than a very coarse blend, but either can work with enough tossing.
Why did my popcorn turn soggy?
You may have used too much fat or covered the popcorn after seasoning it.
Start with 1 tablespoon. Add more only if the podi still won’t stick.
Serve the popcorn soon and leave the bowl uncovered so trapped steam can escape.
Easy variations
- Tangy: Add a little amchur after the podi.
- Cheesy: Add finely grated parmesan while the popcorn is hot.
- Extra hot: Add another half teaspoon of podi instead of loose chilli powder.
- Nutty: Toss in roasted peanuts for more crunch.
