Chicken meatball curry needs gentle handling. Keep the mince cold, shape it without squeezing hard, and let the gravy simmer quietly once the meatballs go in.
Karnataka Podi seasons the mince in this version. The onion-tomato gravy stays fairly simple so there’s room for the roasted flavour. Serve it with rice and spoon over plenty of sauce.
Ingredients for 4 servings
Prep: 25 minutes, plus 15 minutes chilling. Cooking: about 35 minutes. Makes roughly 16 small meatballs.
For the meatballs
- 500 g chilled chicken mince, preferably thigh or a thigh-and-breast mix
- 1½ tablespoons Rapidli Karnataka Podi
- 2 tablespoons fine dry breadcrumbs
- 2 tablespoons thick plain curd
- 1 teaspoon grated ginger
- 1 tablespoon finely chopped coriander
- 1 teaspoon oil for lightly greasing your hands
- Salt only if needed after cooking a small tester
For the gravy
- 1 tablespoon oil
- ½ teaspoon cumin seeds
- 1 large onion, finely chopped
- 1 teaspoon ginger-garlic paste
- 250 g ripe tomatoes, blended or finely chopped
- ¼ teaspoon turmeric
- 250 ml water to start, plus more as needed
- 2 tablespoons plain curd, whisked smooth
- Chopped coriander to finish, optional
- Salt to taste, after the meatballs are cooked
Shape without packing the mince tightly
- Mix the cold mince with podi, breadcrumbs, curd, ginger and coriander until just combined. Don’t knead it into a dense paste.
- Cook a teaspoon-sized portion separately in a small pan until it reaches 74°C in the centre. Taste this cooked tester, never the raw mince, before deciding whether the mixture needs salt.
- Lightly oil clean hands and shape the remaining mixture into about 16 balls, roughly 3 cm across. Put them on a clean plate, cover and refrigerate for 15 minutes.
If the mixture is very loose, add 1 extra teaspoon of breadcrumbs and chill again. Too many breadcrumbs can make the meatballs firm, so add gradually.

Build the gravy
- Heat the tablespoon of oil in a wide saucepan over medium heat. Add cumin, then onion. Cook for 8 to 10 minutes, stirring, until soft and lightly golden.
- Add ginger-garlic paste and cook for about 1 minute. Stir in tomatoes and turmeric. Cook for 7 to 10 minutes until the tomatoes soften into a thick base.
- Lower the heat. Stir in the whisked curd a little at a time, then add 250 ml water. Bring to a gentle simmer.
Simmer the meatballs until safely cooked
- Lower the chilled meatballs into the simmering gravy one at a time. Keep them mostly covered by the sauce, adding a little hot water if needed.
- Cover partly and simmer gently for about 12 to 18 minutes. Let them set for the first few minutes before moving them. Gently shake the pan or turn with a spoon rather than stirring hard.
- Check the centre of several of the largest meatballs with a food thermometer. Chicken, including ground chicken, must reach 74°C / 165°F. Time alone and meat colour aren’t reliable checks. Continue simmering if needed.
- Once cooked, adjust the gravy with a splash of hot water if too thick. Taste and add salt only if needed. Finish with optional coriander and serve hot.
Keep the meatballs tender
A hard boil can break them before they set. Keep the sauce at a quiet simmer with small bubbles. If you’re using very lean breast mince, watch doneness closely rather than letting it cook far beyond the required temperature.
