Already have boiled eggs in the fridge? Then a snack is about five minutes away. A little podi gives the eggs crunch, warmth and enough flavour to make them feel like something you chose to eat.
This works well with Rapidli Karnataka Podi. Its roasted dals, sesame, coconut and chillies bring more to the plate than plain chilli powder.
What you need
- 2 hard-boiled eggs, peeled
- 1 tsp podi to start
- About 1 tsp sesame oil or melted ghee
- A few drops of lemon juice, if you like
The five-minute timing assumes the eggs are cooked already. If you’re boiling them now, allow extra time to cook and cool them.

Make it
- Cut the eggs in half and put them cut-side up on a plate.
- Drizzle a little oil or ghee over the yolks and whites. Sprinkle on the podi.
- Add lemon if you want a brighter finish. Taste before adding salt, since the podi already contains rock salt.
Start with half a teaspoon of podi per egg. You can always add more at the table. A heavy first sprinkle can hide the egg’s flavour.
Keep the podi crisp
For the best texture, add the podi right before eating. If you dress the eggs hours ahead, the seasoning absorbs moisture and loses some crunch. That doesn’t ruin the snack, but the fresh sprinkle is nicer.
Serving friends? Put the eggs on a plate and let everyone add their own podi. It’s an easy way to handle different heat preferences without making a separate batch.
