A quesadilla earns its place at lunch with a crisp shell and warm, melted cheese. Add corn, capsicum and a little Karnataka Podi, and the filling gets a roasted kick too.
The important bit happens before you fold the tortilla. Cook away the vegetables’ extra moisture. A wet filling steams the shell from inside, making it soft just when you want it crisp.
The recipe at a glance
Serves 2. Prep: 10 minutes. Cook: about 15 minutes. Makes 2 folded quesadillas.
What you’ll need
- 2 medium flour tortillas, about 20 cm across
- ¾ cup cooked sweet corn kernels, drained well
- ½ cup finely diced capsicum
- ¼ cup finely chopped onion
- 2 tsp Rapidli Karnataka Podi
- ¾ cup grated melting cheese, about 75 g
- 1 tsp oil for the filling
- 1 tsp oil for the pan, divided
- Salt only if needed
Use mozzarella for a mild, stretchy filling, or a mozzarella and cheddar mix for more flavour. Cheese and podi both contain salt, so taste the cooked filling before adding any.
If using frozen corn, cook it as the packet directs, then drain. Tinned corn needs thorough draining too. Water clinging to the kernels ends up inside the tortilla.
Cook a filling that won’t soak the shell
- Warm 1 teaspoon of oil in a wide pan over medium heat. Add the onion and cook for about 2 minutes, until softened.
- Add capsicum and cook for another 2 to 3 minutes. Keep the pieces small so they soften without a long cook.
- Stir in the drained corn. Cook for 1 to 2 minutes, until any surface moisture has evaporated.
- Switch off the heat. Stir in the Karnataka Podi and leave the filling to cool for a few minutes.
The pan should look dry beneath the vegetables. If liquid collects there, cook a little longer before seasoning. Add the podi after the hard cooking so its finer ingredients don’t sit on a dry, hot surface.

Fill, fold and toast
- Lay a tortilla flat. Scatter a quarter of the cheese over one half, leaving a small clear edge.
- Spread half the vegetable filling over the cheese. Add another quarter of the cheese on top, then fold the empty half over it.
- Heat a clean frying pan over medium-low heat. Brush with a little of the remaining oil and place the folded tortilla in it.
- Cook for about 2 to 3 minutes per side, pressing lightly with a wide spatula. Turn carefully once the base is golden.
- Check that the cheese has melted. If the shell colours too fast, lower the heat and briefly cover the pan, then uncover to keep the surface crisp.
- Repeat with the second tortilla. Rest each cooked quesadilla for a minute before cutting into wedges.
A modest filling folds better
It’s tempting to use every last spoonful of corn. Too much filling makes the tortilla hard to turn and pushes cheese out onto the pan.
Spread it in an even, shallow layer. Cheese below and above the vegetables helps hold the quesadilla together once it melts. Keep the edge clear rather than packing it tightly.
Can you use roti?
A soft, freshly cooked roti can work for a home-style version. A dry or thick one may crack at the fold. Warm it briefly first, and keep the filling light.
For another meal wrapped in roti, try our podi omelette roll. The egg filling gives it a different breakfast feel.
Serve it straight from the pan
Plain curd and sliced cucumber make easy sides. Try podi tomato chutney if you want a tangy dip. Taste the quesadilla before adding extra seasoning at the table.
For making ahead, refrigerate the cooked filling promptly in a covered box and assemble when you’re ready to eat. The shell is at its best freshly toasted.
