Medu vada is a popular South Indian snack made with a batter of ground urad dal and spices, deep-fried to form a crispy, donut-shaped vada. Here is a recipe for medu vada:
Ingredients:
- 1 cup of urad dal
- 1 tsp of cumin seeds
- 1 tsp of fennel seeds
- 1 tsp of mustard seeds
- 1 green chili, finely chopped
- 1 small onion, finely chopped
- 1 small handful of fresh curry leaves, finely chopped
- Salt, to taste
- Oil, for frying
Instructions:
- Rinse the urad dal in cold water and soak it in water for 3-4 hours.
- Drain the water from the dal and grind it in a blender or food processor until it forms a smooth batter.
- Transfer the batter to a bowl and add the cumin seeds, fennel seeds, mustard seeds, green chili, onion, curry leaves, and salt to taste. Mix well to combine.
- Heat a large pan of oil over medium heat. Wet your hands and scoop a small ball of the batter into your hand. Flatten it slightly and make a hole in the center to form a donut shape.
- Carefully slide the vada into the hot oil and fry for 3-4 minutes, or until it is golden brown on both sides.
- Remove the vada from the oil using a slotted spoon and drain on a paper towel.
- Repeat the process with the remaining batter. Serve the medu vada hot with coconut chutney or sambhar. Enjoy!
